Impress with quick and delicious cheesy scones.
Ingredients:
  • 450.00 gm self-raising flour
  • 2.40 gm salt
  • pinch cayenne pepper
  • 50g butter, chilled, chopped
  • 125.00 ml mixed herbs (such as oregano, rosemary and dill), finely chopped
  • 82.50 ml grated light tasty cheese
  • 257.50 gm reduced-fat milk
  • 82.50 ml natural yoghurt
  • 20.00 ml finely chopped chives
  • 100g 97% fat-free shaved leg ham
Instructions:
  • Preheat your oven to 220°C and line a baking tray with non-stick baking paper.
  • In a large bowl, sift flour and add salt, cayenne pepper, and pepper. Mix well. Add butter and use your fingertips to rub it into the flour mixture until it resembles fine breadcrumbs.
  • Mix herbs and cheese into the flour mixture until well combined. Pour in milk and stir with a flat-bladed knife until a soft dough forms. Knead lightly on a floured surface, then shape the dough into a 2cm-thick round. Use a 5cm cutter to cut out 12 rounds and place them closely together on a baking tray.
  • Bake for 12 minutes, or until beautifully golden and puffed up. Let cool slightly on the baking tray.
  • In a small bowl, mix yoghurt, chives, salt, and pepper. Halve the scones. Spread shaved ham and chive mixture onto 12 scone halves. Top with remaining scone halves to make sandwiches. Serve and enjoy!
