Golden savory puffed snacks, perfect for picnics or a tasty midweek treat.
Ingredients:
  • 150.00 gm self-raising flour
  • 1.20 gm salt
  • 1 egg
  • 386.25 gm milk
  • 62.50 ml finely grated parmesan cheese
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 36.80 gm vegetable oil
Instructions:
  • In a bowl, combine flour and salt and create a well in the center. Whisk together egg and milk in a jug, then add to the flour mixture and whisk until smooth. Transfer the mixture to a large jug, cover, and let it rest for 30 minutes. Finally, stir in cheese and parsley before using.
  • Preheat your oven to 220°C/200°C fan-forced. Divide oil evenly among the 12 holes of a 1/3 cup-capacity muffin pan. Place the pan in the oven and heat for 5 to 7 minutes until the oil is just smoking.
  • Gently pour mixture into the holes, filling them halfway. Bake for 15 to 20 minutes or until they are puffed and golden. Transfer to a plate and serve.
