Unforgettable ham with Dijon mustard BBQ glaze, perfect for any occasion.
Ingredients:
  • 141.25 gm barbecue sauce
  • 23.40 gm Dijon mustard
  • 7kg butcher full leg ham
Instructions:
  • Preheat the oven to 170C (150C if fan-forced).
  • In a small saucepan, mix barbecue sauce, mustard, and 1/2 cup of water. Simmer over medium heat, stirring occasionally, until the sauce slightly thickens, about 5 minutes.
  • Remove the rind from around the shank of the ham approximately 10cm from the knuckle. With your fingers, gently peel off the skin, starting from the base of the ham. Score the fat in 1cm strips, being careful not to cut through to the meat of the ham.
  • Prepare a large baking dish by lining it with foil. Next, position the ham in the pan and generously brush it with the glaze. Bake the ham for 2 hours, remembering to brush it with the glaze every 30 minutes, until the ham reaches a golden finish and the glaze has caramelized to perfection.
  • Cut the ham into slices and elegantly present on a platter for serving.
