Baked Lemon-Garlic Tilapia and Potatoes in Foil

Quick and flavorful foil-baked tilapia with lemon, garlic, potatoes, and bell pepper. Ready in just 30 minutes!
Ingredients:
  • 2 pieces heavy-duty aluminum foil
  • cooking spray
  • 1 medium potato, peeled and cut into 1/2-inch cubes
  • 2 tablespoons diced red bell pepper
  • 1 (1 ounce) package seafood seasoning
  • 3 teaspoons butter, divided
  • 2 (7 ounce) tilapia fillets
  • 1 medium lemon, divided
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and generously spray foil with cooking spray.
  • On each piece of foil, place a generous portion of diced potato and red bell pepper. Sprinkle the seafood seasoning evenly over the top. Drizzle each portion with 1 1/2 teaspoons of butter.
  • Place a tilapia fillet on top of the potatoes in each packet. Season the fillets with the remaining seafood seasoning and dot each fillet with the remaining 1 1/2 teaspoons of butter.
  • Thinly slice half of the lemon and layer 1 to 2 slices on each fillet. Seal the foil packets securely by crimping the edges.
  • Cook the tilapia in the preheated oven until it flakes easily with a fork, approximately 25 minutes.
  • Carefully open packets to release steam. Squeeze any remaining lemon juice over the tilapia and serve promptly.
