Baked mulled quinces

Indulge in a delectable quince dessert while in season from March to July!
Ingredients:
  • 2 large quinces
  • 53.75 gm caster sugar
  • 247.50 gm red wine
  • 1 vanilla bean, split, seeds scraped
  • 2 star anise
  • 1/2 cinnamon stick
  • 5 cloves
  • Vanilla yoghurt, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced. Arrange quinces on a baking tray and bake for 2 hours, or until tender when pierced with a skewer.
  • Peel and quarter each quince lengthwise, removing the core. Arrange snugly in a small baking dish.
  • Dust the quince with caster sugar and generously drizzle with red wine. Add vanilla bean, star anise, cinnamon, and cloves for an aromatic boost.
  • Lower the temperature to 160C/140C fan forced. Cover the dish securely with baking paper and foil, then bake for 1 hour or until rosy pink. Enjoy with a side of vanilla yoghurt.
