Mulled wine sorbet with clove biscuits

Make a batch of over 60 biscuits, great for the holidays or as gifts.
Ingredients:
  • 2 oranges
  • 12 cloves
  • 2 cinnamon sticks
  • 750ml red wine
  • 2.50 gm ground mixed spice
  • 90.00 gm light brown sugar
  • 60ml port
  • 165g white sugar
  • 375g plain flour
  • 97.50 gm rice flour
  • 375g butter, cubed
  • 60 cloves
Instructions:
  • To make the sorbets, halve an orange and stud both halves with cloves. Combine in a saucepan with cinnamon sticks, wine, mixed spice, and sugar. Heat gently until sugar dissolves, then simmer covered on low for 10 minutes. Let cool, strain, add juice from the remaining orange and port or brandy to the mulled wine. Chill in the refrigerator for a few hours before serving.
  • Transfer the mixture into a shallow container and freeze until edges are frozen. Take out from freezer and whip with an electric beater. Return to container and freeze again. Repeat 2-3 times. Alternatively, use an ice-cream machine as per manufacturer's instructions.
  • Heat your oven to 140°C.
  • While the sorbet chills, make the biscuits. Combine sugar, flour, rice flour, and 1 teaspoon of salt in a food processor. Add butter and pulse until just mixed. Transfer the dough to a floured surface and gently shape it into a ball. Divide the dough in half and roll out each piece to 1cm thickness. Cut out rounds using a 4cm cookie cutter, then place them on a greased baking tray. Sprinkle with sugar, prick with a fork, and press a clove into the center of each biscuit. Bake on the lower oven racks for 25 minutes until lightly golden. Once baked, cool on a wire rack and store in an airtight container.
  • Serve scoops of refreshing sorbet in elegant glasses accompanied by one or two delectable clove biscuits on the side.
