Healthier baked onion bhajis: Oniony, crunchy, and aromatic Indian fritters.
Ingredients:
  • 2 teaspoons extra-virgin olive oil, or as needed
  • 5 small onions, thinly sliced
  • 0.25 teaspoon chili powder
  • 0.5 teaspoon ground coriander
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon ground ginger
  • 5 tablespoons chickpea flour
  • 0.5 teaspoon ground cumin
  • 1 pinch salt
  • 1 tablespoon tomato puree
  • 1 tablespoon water, or as needed
  • 1 tablespoon extra-virgin olive oil, divided, or to taste
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper.
  • In a skillet over medium heat, sauté onions in oil until translucent, about 6 to 8 minutes. Stir in chili powder, turmeric, coriander, cumin, and ginger until fully combined. Remove from heat.
  • Prepare the batter by thoroughly combining chickpea flour, cumin, coriander, and salt. Incorporate onions and tomato purée, then adjust consistency by adding water until smooth and stirrable.
  • Drizzle the prepared baking sheet with a touch of flavorful olive oil. Spoon 2 tablespoons of the onion mixture onto the sheet for each bhaji, gently pressing down with a spoon to flatten.
  • Bake in the preheated oven for 20-25 minutes. Drizzle remaining oil over the bhajis and bake until golden brown, about 25 more minutes.
