Create crispy, tasty baked onion rings with sliced onions, a quick breading mix, and a hot oven.
Ingredients:
  • cooking spray
  • 2 large egg whites
  • 2 tablespoons milk
  • 3 cups panko bread crumbs, or more if needed
  • 0.5 cup all-purpose flour
  • 1 large yellow onion - ends trimmed off, peeled, and cut crosswise into 1/2-inch slices
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C) and generously coat a big rimmed baking sheet with cooking spray.
  • Combine egg whites, milk, and cayenne pepper in a bowl until well mixed. Set aside panko in another bowl.
  • Coat onion slices in milk mixture using tongs until fully covered. Shake off excess liquid, then coat in panko by shaking in a bowl. Place on baking sheet and repeat with remaining onions. Lightly spray coated onions with cooking spray.
  • Bake in the oven until onions are tender and crumbs are lightly golden brown, around 12-15 minutes.
