Tender pork and sauerkraut oven-baked with apple and onion, perfect for a flavorful New Year's feast.
Ingredients:
  • 1 (3 pound) pork roast
  • 2 (14.5 ounce) cans sauerkraut, or to taste
  • 3 cups water, or more as needed
  • 1 onion, chopped
  • 1 medium apple - peeled, cored, and finely chopped
Instructions:
  • Preheat the oven to 400°F (200°C) for a perfect bake.
  • In a large roasting pan, generously season pork with salt and black pepper. In a separate bowl, combine sauerkraut, water, onion, and apple mixture, then pour over the seasoned pork.
  • Roast the pork in a preheated oven for about 1 hour until heated through. Lower the oven temperature to 300°F (150°C) and roast for an additional 2 hours until the internal temperature reaches at least 145°F (63°C). Add water as needed if the sauerkraut mixture looks dry.
  • Take the pork out of the oven and let it rest for approximately 10 minutes in a cozy place before carving.
