5-ingredient baked onion, a perfect side for roast lamb or chicken.
Ingredients:
  • 4 red onions
  • 18.20 gm extra virgin olive oil, plus extra to drizzle
  • 20.00 ml white balsamic
  • 50g feta
  • 2 tsp sliced pistachios
  • Sumac, to sprinkle
Instructions:
  • Preheat the oven to 200C/180C fan forced and line a baking tray with baking paper. Peel the onions and trim the root ends so they sit flat. Use a sharp knife to slice each onion 4 times from top to base, stopping about 1cm from the base, being careful not to cut all the way through. Arrange onions on the tray.
  • Drizzle each onion with a decadent combination of extra virgin olive oil and white balsamic. Cover and bake for 25 minutes, then uncover and bake a bit more for ultimate crispiness. Finish off this masterpiece by drizzling more oil and adding feta, sliced pistachios, and a pinch of sumac for a burst of flavor.
