Master Italian-style bread with a stunning floral design using edible flowers.
Ingredients:
  • 310ml water
  • 5.00 gm caster sugar
  • 2 tsp (1 sachet/7g) dried yeast
  • 450g plain flour
  • 2.40 gm salt
  • 80ml olive oil
  • 2 spring onions, ends trimmed
  • 1/2 red onion, thinly sliced
  • 200g mixed cherry tomatoes, halved
  • Chives, to decorate
Instructions:
  • In a jug, mix water, sugar, and yeast together. Allow the mixture to sit for 5 minutes, or until it becomes frothy.
  • In a large bowl, mix together the flour and salt. Create a well in the center and pour in the yeast mixture and olive oil. Stir until everything is well combined.
  • Transfer the dough to a lightly floured surface and knead for 10 minutes until smooth and elastic. Place it in a large oiled bowl, cover with plastic wrap, and let it rise in a warm, draft-free place for 1 hour or until doubled in size.
  • Preheat oven to 200°C. Deflate the dough, then knead on a floured surface until smooth. Grease a 25cm x 35cm baking tray and roll out the dough to fit. Transfer dough to the tray and create dimples with the end of a wooden spoon.
  • Create beautiful flower and stem designs using spring onion, red onion, tomato, and chives. Lightly spray with olive oil and sprinkle with sea salt flakes. Allow to rest in a warm place for 15 mins for a slight rise.
  • Bake at the same temperature for 10 mins. Then lower the oven temperature to 180°C and bake for an additional 20 mins, or until the focaccia is lightly golden and fully cooked. Allow to cool slightly before serving warm or at room temperature.
