Vegan floral dandelion syrup - a delicious honey alternative using dandelion blossoms.
Ingredients:
  • 12 ounces dandelion flowers
  • water
  • 1.5 cups raw cane sugar, or more to taste
  • 1 lemon, juiced
Instructions:
  • Remove dandelion petals from stems, wearing gloves to prevent staining. Measure out 5 ½ ounces of petals, discarding stems and leaves.
  • Place dandelion petals in a container and completely cover with water. Allow to steep in a cool, dark place for up to 24 hours.
  • Strain flower petals through a fine-mesh sieve into a saucepan, pressing them with your hands to extract as much liquid as possible. Mix in sugar and lemon juice and cook over medium heat until it comes to a boil. Let it simmer without a lid until a thin syrup develops, usually around 45 minutes. Allow the syrup to cool until it slightly thickens.
  • Transfer the mixture into a bottle and refrigerate. Enjoy your fresh syrup for up to 1 month!
