Enjoy a light and crispy Parmesan-crusted Australian Garfish dish perfect for a refreshing summer meal.
Ingredients:
  • 12 Australian Garfish, butterflied, head removed, tail on
  • 40g (1/2 cup) finely grated parmesan
  • 82.50 ml finely chopped fresh flat-leaf parsley leaves, plus extra leaves to serve
  • 2 tsp finely grated lemon rind, plus wedges, to serve
  • 75g butter, melted
  • 80g mixed baby salad leaves
  • 1 avocado, thinly sliced
  • 1 lebanese cucumber, thinly sliced
  • 200g grape tomatoes, sliced
  • 4 red radish, thinly sliced
  • 40.00 ml balsamic dressing
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Line 2 baking trays with baking paper and arrange the garfish fillets, skin side down, in a single layer on the trays.
  • In a large bowl, combine breadcrumbs, cheese, parsley, and rind. Mix in the butter and season the mixture. Spread the crumb mixture over the garfish. Bake until the crumbs are golden and the fish is cooked through, about 10 to 12 minutes. Enjoy!
  • Combine salad leaves, avocado, cucumber, tomato, radish, and dressing in a bowl. Season well and toss together.
  • Plate the fish alongside a fresh salad, lemon wedges, and additional parsley leaves.
