Flounder baked with tangy lemon juice, topped with a golden crust of mayo, Parmesan, and green onions.
Ingredients:
  • cooking spray
  • 2 pounds flounder fillets, rinsed and patted dry
  • 0.25 teaspoon salt
  • 3 tablespoons lemon juice, divided
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup butter, melted
  • 3 tablespoons mayonnaise
  • 3 tablespoons chopped green onions
Instructions:
  • Preheat the oven to 375°F (190°C) and generously coat a 9x13-inch baking dish with nonstick spray.
  • Season both sides of the flounder fillets generously with flaky sea salt. Gently lay the seasoned fillets in the baking dish you've prepared, then brush them with a drizzle of bright and tangy 1 tablespoon of fresh lemon juice.
  • Combine Parmesan cheese, rich melted butter, creamy mayonnaise, fresh green onions, and the extra 2 tablespoons of zesty lemon juice in a bowl. Drizzle the flavorful mixture over the fillets.
  • After baking in the preheated oven for 10 minutes, switch on the broiler and broil the fillets until they are lightly browned on top, for about 3 to 5 minutes.
