Grilled baked potatoes with buttery onions for a tender, moist, flavorful twist.
Ingredients:
  • 4 large baking potatoes
  • 2 Vidalia onions, sliced, or more as needed
  • 1 stick butter, sliced into pats
Instructions:
  • Prepare your outdoor grill by preheating it to medium heat and giving the grate a light coating of oil.
  • Carefully slice potatoes lengthwise, creating evenly spaced fan-like cuts without cutting all the way through.
  • Separate slices with care and season potatoes with salt and pepper. Slip onion and butter slices between potato layers. Encase each potato in heavy-duty aluminum foil, ensuring a tight seal.
  • Grill over high heat until tender, turning occasionally, for about 1 hour. Rest for 10 minutes before unwrapping.
