Versatile and delicious baked potatoes with ramps and feta - ideal as a vegetarian main or side dish with steak or pork chops.
Ingredients:
  • 2 pounds potatoes, washed
  • salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil, or as needed
  • 5 medium tomatoes, chopped
  • 1 (6 ounce) container crumbled feta cheese
  • 1 cup ramp, wild leek
Instructions:
  • In a large pot, submerge the potatoes in salted water and bring to a boil. Lower the heat to medium-low and gently simmer for approximately 20 minutes until the potatoes are tender. Drain the potatoes before using further.
  • Allow the potatoes to cool slightly, then halve them.
  • Preheat the oven to 400°F (200°C) and gently coat a baking sheet with olive oil.
  • Toss together tomatoes, feta, and ramps, then season with salt and pepper. Spoon 1 tablespoon of the mixture onto each potato half and place on the baking sheet.
  • Place the dish in the middle of the preheated oven and bake until the cheese becomes golden brown, approximately 20 minutes.
