Bake seasoned red snapper fillets with garlic, lime, and cilantro for a flavorful weeknight meal.
Ingredients:
  • cooking spray
  • 2 pounds skin-on red snapper fillets
  • 2 cloves fresh garlic, minced
  • 1 pinch garlic salt, or to taste
  • 1 pinch ground red chile pepper, or to taste
  • 0.5 cup chopped fresh cilantro
  • 1 lime
  • 2 tablespoons butter
Instructions:
  • Prepare your baking dish with a light coating of cooking spray. Lay the red snapper skin-side down in the dish. Season evenly with garlic, garlic salt, and red pepper. Distribute the cilantro over the fish and drizzle lime juice evenly on top.
  • Chill in the fridge for 30 minutes to 1 hour to infuse flavors.
  • Preheat the oven to 425°F (220°C), then drizzle the melted butter evenly over the fish.
  • Bake in the heated oven until the fish flakes easily with a fork, for about 15-18 minutes. Serve with spooned juices over the fish, as desired.
