Baked Red Snapper with Shrimp and Mushrooms

Baked red snapper, shrimp, and mushrooms in a delicious cream sauce - perfect for impressing guests.
Ingredients:
  • cooking spray
  • 4 tablespoons butter
  • 0.5 cup chopped onion
  • 0.25 cup chopped celery
  • 0.25 cup chopped bell pepper
  • 1 teaspoon chopped garlic
  • 0.25 cup all-purpose flour
  • 0.25 teaspoon Creole seasoning (such as Slap Ya Mama®), or more to taste
  • 2 cups half-and-half, or more as needed
  • 3 tablespoons sherry
  • 3 tablespoons fresh lemon juice
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon ground thyme
  • 1 teaspoon salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
  • 0.25 cup shredded mozzarella and Cheddar cheese blend
  • 3 pounds red snapper fillets
  • 1.5 pounds medium-large shrimp, peeled and deveined
  • 0.5 teaspoon seafood seasoning (such as Old Bay®)
  • 1 (8 ounce) package sliced fresh mushrooms
  • 0.25 cup shredded Parmesan cheese
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray.
  • In a large skillet over medium-low heat, melt butter for the cream sauce. Saute onion, celery, bell pepper, and garlic until vegetables soften and onion is translucent, about 5 to 7 minutes.
  • Combine flour and Creole seasoning with the onions, creating a flavorful paste. Slowly pour in half-and-half while whisking continuously. Mix in sherry, lemon juice, basil, and thyme. Season with salt and pepper. Cook and stir until the sauce thickens for about 3 to 4 minutes. Take the sauce off the heat and stir in mozzarella until it melts and blends well.
  • Season the snapper and shrimp delicately with seafood seasoning. Line the baking dish with snapper in a single layer. Add shrimp and mushrooms on top. Drizzle cream sauce over them and sprinkle with Parmesan cheese.
  • Cook in the preheated oven until the fish easily flakes with a fork, the shrimp turn bright pink and the meat is opaque, approximately 30 minutes.
