Baked red snapper with zesty garlic-lemon-dill butter, an easy dinner for two.
Ingredients:
  • 4 (4 ounce) red snapper fillets
  • 3 tablespoons butter
  • 2 cloves garlic cloves, minced
  • 1 lemon, juiced
  • 1 sprig fresh dill, or more to taste
  • salt and freshly ground black pepper to taste
Instructions:
  • Preheat the oven to 375°F (190°C) and prepare a baking sheet lined with parchment paper.
  • Lay the red snapper filets skin side down on the baking sheet.
  • In a small saucepan over gentle heat, melt butter until bubbly. Add garlic and cook in the fragrant butter until softened, for about 3 minutes. Finish by squeezing fresh lemon juice on top, making sure to strain out any seeds.
  • Coat both pieces of snapper generously with the flavorful garlic butter mixture, then season with salt and pepper to your liking.
  • Cook the fish in the preheated oven until it turns opaque and feels firm, approximately for 20 minutes. Serve right away.
