Citrus herb baked salmon and rice with steamed vegetables.
Ingredients:
  • 1 cup brown rice
  • 2.5 cups water
  • 1 pound salmon fillet
  • 0.25 cup orange juice
  • 1 teaspoon dried dill weed
  • 1 teaspoon dried rosemary
  • 1 teaspoon dry mustard
  • 1 teaspoon lemon pepper
Instructions:
  • Bring 2 1/2 cups of water to a boil in a saucepan. Stir in the rice, cover, and simmer for 20 minutes.
  • Preheat your oven to 350°F (175°C) for a perfect bake.
  • Add a thin layer of water to a large pan. Arrange salmon with the pink side facing up in the center and surround it with cooked rice. Finally, drizzle the salmon and rice with fresh orange juice.
  • Mix dill weed, rosemary, basil, mustard, and lemon pepper in a small bowl. Sprinkle the flavorful blend over the salmon and rice, then cover with aluminum foil.
  • Cook the salmon in the preheated oven for 30 to 40 minutes, or until it is tender and flakes easily.
