Effortless cheesy baked rice with canned salmon, frozen veggies, and jarred sauce for a quick and satisfying meal!
Ingredients:
  • 490g jar pasta bake three-cheese sauce
  • 415g can red salmon, drained, flaked, large bones discarded
  • 250g (11 ⁄2 cups) frozen peas, corn & capsicum
  • 60ml (1 ⁄4 cup) thickened cream
  • 1 green shallot, thinly sliced
  • 450g packet microwave long grain white rice
  • 120g (1 1/2 cups) coarsely grated cheddar
Instructions:
  • Combine pasta sauce, salmon, frozen veggies, cream, and shallot in a saucepan over medium-high heat. Stir and cook until the mixture boils, about 3-4 minutes.
  • Heat the rice in the microwave as instructed on the packet. Spread the rice evenly over the greased 2L (8 cup) baking dish.
  • Preheat the oven grill on high. Spread the salmon mixture over the rice and sprinkle with cheese. Grill for 3 minutes until the cheese is golden and melted.
