Indulge in a cheesy brunch bake with layers of Original Bisquick® mix, gooey cheese, and ripe tomatoes.
Ingredients:
  • 4 eggs
  • 2 boxes (5.2 oz each) Betty Crocker™ Seasoned Skillets® hash brown potatoes
  • 1 package (8 oz) cream cheese, cut into 1/2-inch cubes
  • 6 oz smoked salmon, flaked
  • 1 tablespoon dried chopped onion
  • 1 cup Original Bisquick™ mix
  • 1/2 teaspoon pepper
  • 3 cups milk
  • 4 oz pepper Jack cheese, shredded
  • 1/2 cup chopped green onion tops (green part only)
Instructions:
  • Grease a 13x9-inch (3-quart) baking dish with cooking spray.
  • Spread a layer of potatoes in the baking dish. Scatter half of the cream cheese cubes and the salmon pieces over the potatoes. Sprinkle with dried onion. Add another layer of potatoes and cream cheese on top.
  • Beat Bisquick mix, pepper, milk, and eggs in a large bowl until blended. Pour over mixture in baking dish, sprinkle with shredded cheese, cover with foil, and refrigerate for at least 4 hours but no longer than 24 hours.
  • Preheat oven to 375°F. Bake uncovered for 32-38 minutes until golden brown and a knife inserted in the center comes out clean. Finish by sprinkling with green onions and allowing it to rest for 10 minutes before serving.
