Try this delicious and wallet-friendly savory pancake tray bake for a perfect weekend brunch with loved ones.
Ingredients:
  • 500.00 ml plain flour
  • 520.00 gm buttermilk
  • 1 egg
  • 40.00 ml chopped fresh dill, plus extra, to serve
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 50g butter, melted
  • 120.00 gm smooth ricotta
  • 150g smoked salmon slices, halved
  • 60g baby rocket
  • 1 small red onion, cut into rings
  • 3 baby cucumbers, peeled into ribbons
  • Capers, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease and line a 24.5cm x 37.5cm baking tray with baking paper, leaving an overhang of 2cm on the short sides. Your tray should be 3cm deep.
  • In a big bowl, mix flour and bicarbonate of soda, then season with salt and pepper. Create a well in the center. In a large jug, whisk together buttermilk, egg, dill, and parsley. Pour buttermilk mixture into the well, and whisk until just combined.
  • Prepare the tray by brushing baking paper with half of the melted butter. Spread the batter in the tray and smooth the top. Lightly dab the remaining butter on top. Bake for 8 to 10 minutes until golden and a skewer inserted in the center comes out clean.
  • Preheat the grill on high until sizzling. Grill the pancake for 1 to 2 minutes or until beautifully golden. Let the tray rest for 1 minute to cool slightly.
  • Spread a generous portion of ricotta cheese on the pancake. Add smoked salmon, fresh rocket, sliced onions, and cucumbers on top. Sprinkle with capers and garnish with lemon wedges. Serve promptly.
