Effortless baked salmon with crispy panko-coconut coating. Simply irresistible!
Ingredients:
  • 4 (4 ounce) salmon fillets, skin removed
  • 1 tablespoon lime or lemon juice
  • 0.5 cup panko (Japanese bread crumbs, available in the Asian food aisle), or substitute dry bread crumbs
  • 0.25 cup flaked sweetened coconut
  • Salt and freshly ground pepper, to taste
  • Cooking spray
Instructions:
  • Heat your oven to a toasty 425 degrees F (220 degrees C).
  • Lay the salmon fillets on a nonstick baking pan and generously brush them with juice.
  • Combine panko, coconut, salt, and pepper in a shallow dish. Coat each salmon fillet in the mixture and place back in the baking pan. Sprinkle remaining crumbs on top of the fillets. Finish by coating with cooking spray.
  • Bake in the oven until golden brown, about 12 to 15 minutes. Optionally, broil for a golden brown crust.
