This delicious sweet coconut baked salmon is a crowd-pleaser, perfect for a quick and easy dinner. Serve with creamy mashed potatoes for a comforting meal. Check and adjust sauce before marinating for maximum flavor.
Ingredients:
  • 1.5 cups butter
  • 0.75 cup honey
  • 0.25 cup brown sugar
  • 0.75 cup flaked coconut
  • 4 (4 ounce) fillets salmon
Instructions:
  • In a saucepan over medium heat, melt the butter then stir in the honey, brown sugar, and coconut. Bring to a boil, then remove from heat and let it cool slightly. Transfer the mixture to a large bowl. Add the salmon, coat it evenly, cover the bowl, and refrigerate to marinate for at least 30 minutes.
  • Preheat your oven to a toasty 375 degrees F (190 degrees C).
  • Coat the bottom of a baking dish with a generous amount of the marinade mixture. Place the salmon in the dish and drizzle the remaining marinade over the top, making sure to include some of the delicious coconut on top.
  • Roast in the preheated oven for 25 minutes, tenderly basting with the leftover marinade until the salmon flakes effortlessly with a fork. You can either discard any extra marinade or simmer for 5 minutes and drizzle over the salmon.
