Bake beef and cheese stuffed peppers with rice for a quick, delicious meal.
Ingredients:
  • 4 green bell peppers, tops and seeds removed (reserve tops)
  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 0.5 cup long grain white rice
  • 1 teaspoon Worcestershire sauce
  • 1 pinch ground black pepper
  • 1 cup shredded Cheddar cheese
Instructions:
  • Finely chop the reserved green pepper tops until you have 1/4 cup; set aside. Discard the rest of the tops or save them for another use.
  • Microwave the hollowed-out green peppers in a covered dish until bright green and steaming, approximately 3 minutes. Then, set the peppers aside.
  • In a skillet over medium heat, sauté ground beef with onion and 1/4 cup of chopped pepper tops until beef is browned, juices run clear, and onion is translucent, approximately 10 minutes. Remove excess grease by draining.
  • Combine diced tomatoes with their juice, rice, water, Worcestershire sauce, salt, and black pepper in a skillet. Bring to a boil, then lower the heat, cover, and simmer until the rice is tender, approximately 30 minutes.
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Mix in the savory Cheddar cheese with the flavorful ground beef and rice blend. Fill the pre-cooked peppers with the delectable mixture and arrange them standing up in a baking dish measuring 8x8 inches.
  • Cook in the oven until the cheese is gooey and the peppers are soft, approximately 30 minutes.
