Succulent jumbo shrimp stuffed with a flavorful mix of crabmeat, buttery crackers, and aromatic seasonings, baked to perfection.
Ingredients:
  • cooking spray
  • 2 (4 ounce) packages crushed buttery round crackers (such as Ritz®)
  • 0.5 cup chopped parsley
  • 5 saltine crackers, crushed
  • 0.5 teaspoon celery salt
  • 1 clove minced garlic
  • 4 sea scallops, chopped
  • 0.5 cup chopped imitation crabmeat
  • 0.25 cup white cooking wine
  • 20 jumbo shrimp, peeled and deveined
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and generously coat a baking dish with cooking spray.
  • Combine round crackers, parsley, saltines, celery salt, and garlic in a large bowl. Mix in scallops, crabmeat, melted butter, and cooking wine until stuffing is well combined.
  • Lay a shrimp flat on your work surface. Slice horizontally through the middle without cutting all the way through. Fold the shrimp open like a book. Repeat with the rest of the shrimp.
  • Fill each shrimp generously with the delicious stuffing and arrange them in the baking dish with the back side facing up. Pour 1 to 2 tablespoons of water into the baking dish to ensure the shrimp stay moist while baking.
  • Cook in the oven until the shrimp turn opaque and the stuffing starts to brown, about 15 to 18 minutes.
