Elevate baked potatoes with shrimp and cheesy sauce stuffing for a gourmet twist.
Ingredients:
  • 4 medium baking potatoes
  • 2 cups milk, plus more as needed
  • 0.5 cup heavy cream
  • 4 tablespoons unsalted butter
  • 1 clove garlic, minced
  • 0.25 teaspoon salt, or to taste
  • 0.125 teaspoon ground black pepper, or to taste
  • 0.125 teaspoon ground nutmeg
  • 4 tablespoons all-purpose flour
  • 1.5 cups grated Gruyere cheese
  • 0.25 cup grated Parmesan cheese
  • 1 pound cooked shrimp, peeled and deveined
  • 0.25 cup freshly chopped parsley
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C), then give those spuds a good scrub and pat them dry.
  • Bake the potatoes on the center oven rack for 1 hour. Begin preparing the sauce during the last 20 minutes of baking.
  • In a microwave-safe container, mix 2 cups of milk and heavy cream. Microwave on high for 45 seconds. Set aside.
  • 1. In a large nonstick skillet over medium heat, melt butter until bubbly. Add garlic, salt, pepper, and nutmeg, and cook for about 1 minute while stirring. 2. Stir in flour and continue stirring until the mixture is bubbly. 3. Pour in hot milk and cream. Cook while stirring until the mixture comes to a boil, about 3 to 5 minutes.
  • Take the mixture off the stove and gently mix in the Gruyere and Parmesan cheeses until they are melted, which should take around 1 minute. If the sauce is too thick, add additional milk, 2 tablespoons at a time, until it reaches the desired consistency.
  • For plating, split each potato and use a fork to lightly fluff the insides. Top each potato with 1/4 portion of cooked shrimp and drizzle with sauce. Garnish with chopped parsley before serving.
