Fresh garden tomatoes turned into a simple and speedy dish.
Ingredients:
  • 6 slices bacon
  • 6 medium tomatoes
  • 0.5 cup chopped green bell pepper
  • 0.25 cup grated Parmesan cheese
  • 0.33333334326744 cup croutons
  • 6 sprigs parsley
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease an 11x7 inch baking dish.
  • In a large, deep skillet, cook the bacon over medium-high heat until evenly browned. Drain, crumble, and set aside. As the bacon is cooking, wash the tomatoes and slice off the stem ends. Gently scoop out the pulp, leaving a 1/2 inch wall. Finely chop enough pulp to measure 1/3 cup and place it in a medium bowl; discard any remaining pulp.
  • Combine crumbled bacon, green pepper, cheese, croutons, salt, and pepper with tomato pulp. Fill each hollowed out tomato with the mixture. Transfer stuffed tomatoes to a baking dish.
  • Place in a preheated oven until warm and sprinkle with fresh parsley before serving.
