A holiday essential in our home for Thanksgiving and Christmas.
Ingredients:
  • 1 (40 ounce) can sweet potatoes, drained
  • 0.25 cup butter
  • 3 cups crushed cornflakes cereal
  • 0.75 cup real maple syrup
  • 10 large marshmallows
Instructions:
  • After draining the sweet potatoes, transfer them to a large mixing bowl. Proceed to mash the potatoes with butter or margarine, then season with salt to suit your taste.
  • Shape mixture into golf ball-sized rounds, coat with crushed corn flakes, and arrange in a greased 9x12 inch baking dish. Drizzle evenly with maple syrup.
  • During the last 15 minutes of baking at 325°F (165°C) for 40 minutes, top each ball with a marshmallow.
