Sweet potato balls filled with gooey marshmallow, coated in crunchy cereal crumbs, and baked to perfection.
Ingredients:
  • 3 cups peeled and chopped sweet potatoes
  • 0.75 cup brown sugar
  • 2 tablespoons milk
  • 0.25 teaspoon salt
  • 0.5 teaspoon grated lemon zest
  • 8 large marshmallows
  • 0.5 cup crushed corn flake cereal
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and lightly grease a 9x13 inch baking dish.
  • 1. Boil water and cook sweet potatoes until tender, around 15 minutes. Drain, then mash with butter, sugar, milk, salt, and lemon zest. Form into balls with a marshmallow center. Coat with cereal crumbs and arrange in dish.
  • Place dish in a hot oven for 20 minutes, or until marshmallows start to melt.
