Scored whole crappies baked with garlic-cilantro paste for deep flavor infusion.
Ingredients:
  • 4 whole crappie fish, gutted and cleaned, tails still on
  • 1 bunch fresh cilantro
  • ¼ cup extra virgin olive oil
  • 2 tablespoons lime juice
  • 3 cloves garlic
  • 2 teaspoons salt
  • 1 teaspoon ground paprika
  • 8 thin slices lemon
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and cover a shallow baking pan with aluminum foil.
  • Dry the fish thoroughly and score the skin in a diamond pattern using a sharp knife. Arrange the fish on a baking pan and cover the tails with foil to prevent them from browning too much.
  • In a blender, blend cilantro, olive oil, lime juice, garlic, salt, and paprika until a smooth paste forms.
  • Coat each fish generously with zesty cilantro-garlic paste, making sure to press it into the cuts. Top each fish with 2 refreshing lemon slices before cooking.
  • Cook the fish in the oven, uncovered, until it easily flakes with a fork, for approximately 20 minutes.
