Vegetarian baked ziti - perfect for feeding a crowd!
Ingredients:
  • 2 (16 ounce) packages ziti
  • 1 (16 ounce) jar spaghetti sauce
  • 1 (15 ounce) container ricotta cheese
  • 1 (6 ounce) package baby spinach leaves
  • 1 pound ready-peeled baby carrots
  • 2 tablespoons olive oil
  • 3 small zucchini, diced
  • 1 (6 ounce) package portobello mushroom caps, diced
  • 1 (8 ounce) package button mushrooms, diced
  • 1.5 tablespoons minced garlic
  • 1 (28 ounce) can diced tomatoes, drained
  • 2 tablespoons Italian seasoning
  • 1 (8 ounce) package shredded Italian cheese blend
  • 3 (16 ounce) jars spaghetti sauce
Instructions:
  • Preheat the oven to 375°F (190°C).
  • - Boil generously salted water in a large pot. Add ziti and cook until al dente, about 8 minutes. Drain and rinse with cold water to halt cooking. Transfer to a large roasting pan.
  • Combine 1 jar of spaghetti sauce with the ricotta cheese in a large bowl, then mix into the pasta until well combined.
  • In the bowl of a food processor, finely chop the spinach; set aside. Then process the carrots until finely chopped.
  • In a large skillet over medium-high heat, heat olive oil. Sauté chopped carrots until they start to soften, about 2 minutes. Add zucchini, portobello mushrooms, button mushrooms, and garlic; cook until zucchini is soft, about 4 minutes. Remove from heat and stir in chopped spinach, tomatoes, and 2 tablespoons Italian seasoning; drain. Combine with ziti and mix. Sprinkle half of the Italian cheese blend over the pasta, stir. Add the 3 jars of spaghetti sauce and mix until everything is coated. Season with 2 tablespoons Italian seasoning, salt, and pepper; mix. Cover with aluminum foil.
  • Bake dish in the preheated oven for 1 to 1 1/2 hours until heated through. Remove foil, sprinkle remaining cheese, and bake for an additional 10 minutes until cheese melts and starts to brown.
