Baklava strudel with orange syrup

Indulge in these irresistible honeyed nut filo rolls.
Ingredients:
  • 100g walnuts
  • 100g blanched almonds
  • 100g pistachio kernels
  • 40.00 gm caster sugar
  • 1 tsp finely grated orange rind
  • 0.30 gm ground cinnamon
  • 6 sheets filo pastry
  • 50g butter, melted
  • 1 orange
  • 125ml (1/2 cup) honey
  • 55g (1/4 cup) caster sugar
Instructions:
  • Preheat your oven to 180C/160C fan forced and line a baking tray with baking paper. Pulse walnuts, almonds, and pistachios in a food processor until finely chopped, then transfer to a bowl. Mix in the sugar, rind, and cinnamon.
  • Lay one filo sheet on a clean surface and lightly brush with melted butter. Add another filo sheet and continue layering with butter to create a stack. Spread the nut mixture evenly, leaving a 1cm border, then roll from the shortest side to enclose the filling.
  • Lay the strudel on the lined tray with the seam down. Brush it with the rest of the butter. Bake until golden and crisp, approximately 25 minutes.
  • Zest the orange using a zester and then juice it. Combine the zest and juice in a saucepan with honey and sugar. Stir over low heat until the sugar dissolves, then increase heat to medium and simmer for 5 minutes until the syrup slightly thickens.
  • Drizzle warm syrup over the strudel and slice into individual servings.
