Indulge in this Balkan filo cheese pie, a rich and satisfying pastry filled with Danish feta, cottage cheese, and dill. Perfect for any occasion, the flaky layers of filo melt in your mouth, offering a taste of Greek cuisine in every bite. A must-have for dinner parties or weekend lunches.
Ingredients:
  • 5 eggs, lightly whisked
  • 500g cottage cheese
  • 400g Danish feta, crumbled
  • 82.50 ml fresh dill, finely chopped
  • 1/2 tsp freshly ground black pepper
  • 125g salted butter, melted
  • 250g filo pastry
Instructions:
  • Preheat the oven to 180C/160C fan forced. Combine the egg, cottage cheese, feta, dill, and pepper in a large bowl, stirring until well mixed.
  • Coat the base and sides of a 28cm (base size, 6 cup) round baking dish with the melted butter.
  • Lay the filo sheet on a clean surface and cover with a dry tea towel followed by a damp one to keep it moist. Brush the first filo sheet with melted butter and place it in the prepared dish, letting it hang over the sides. Layer another filo sheet on top, lightly brushing with butter. Repeat this process with a total of 6 filo sheets. Spread half of the cheese mixture evenly over the stacked filo sheets. Layer another 6 filo sheets, alternating the direction from the first stack, brushing each with butter. Add the rest of the cheese mixture on top. Fold the overhanging filo sheets back over the filling to seal the pie.
  • Add a generous buttery touch to 2 additional filo sheets and carefully layer them on top, ensuring they hug the sides of the dish. Let it bake for 1 hour and 20 minutes until the pastry turns a beautiful golden hue and the filling is perfectly set. Allow it to cool for 10 minutes before enjoying this delightful dish.
