Balkan-inspired chicken thighs simmered in a spiced tomato-wine sauce.
Ingredients:
  • 4 skinless chicken thighs, or more to taste
  • 0.5 lemon, cut into wedges
  • 4 tablespoons olive oil
  • 1 onion, coarsely chopped
  • 2 large cloves garlic, minced
  • 0.5 cup dry white wine
  • 1 (14 ounce) can chopped tomatoes in juice
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 1 pinch white sugar
Instructions:
  • Massage chicken pieces with fresh lemon, infusing them with bright citrus flavor. In a spacious Dutch oven or covered skillet, warm up fragrant olive oil. Sauté onion and garlic until tender, approximately 5 minutes. Introduce the lemon-rubbed chicken pieces and sear until beautifully browned on all sides, a process that takes around 5 to 10 minutes.
  • Cover the chicken with wine and add tomatoes, cinnamon, cloves, allspice, sugar, salt, and pepper. Bring it to a boil in a Dutch oven, then cover and simmer for 45 minutes to 1 hour until the chicken is tender.
