Savory spinach and feta cornbread with tangy buttermilk for a moist texture.
Ingredients:
  • 2 tablespoons cornmeal for dusting
  • 1 cup all-purpose flour
  • 0.5 cup semolina flour
  • 0.5 cup cornmeal
  • 4 cups chopped fresh spinach
  • 3 cups buttermilk
  • 1 cup brine-packed feta cheese, crumbled
  • 4 eggs, lightly beaten
  • 0.66666668653488 cup vegetable oil
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C). Butter a 9x13-inch baking pan and sprinkle the bottom with 2 tablespoons of cornmeal.
  • Combine all-purpose flour, semolina flour, 1/2 cup cornmeal, baking powder, and salt by sifting them together in a bowl. In a separate large bowl, whisk together spinach, buttermilk, feta cheese, eggs, and vegetable oil. Gently stir the flour mixture into the spinach mixture until a pourable batter forms. Transfer the batter into the prepared baking pan.
  • Bake until a toothpick comes out clean when inserted into the center, approximately 45 minutes in a preheated oven.
