Elevate your classic meat and vegetable dish with a decadent balsamic glaze for a delightful twist.
Ingredients:
  • 1kg orange sweet potato (kumara), peeled, cut into 2cm pieces
  • 4.60 gm olive oil
  • 4 (about 125g each) beef fillet steaks, excess fat trimmed
  • 125ml (1/2 cup) balsamic vinegar
  • 60ml (1/4 cup) beef stock
  • 60ml (1/4 cup) water
  • 8 corn cobbettes
  • 250g green beans, topped
Instructions:
  • In a large saucepan, simmer the sweet potato in cold water until tender, approximately 10 minutes. Drain and mash until smooth using a potato masher or fork. Season with pepper to taste.
  • Heat oil in a large non-stick frying pan over medium-high heat. Cook steaks for 2-3 minutes per side for medium doneness. Transfer to a plate, cover with foil, and let rest for 5 minutes. Add vinegar, stock, and water to the pan. Bring to a boil over high heat and cook uncovered for 6-7 minutes until slightly thickened.
  • Steam the corn in a steamer basket over a saucepan of simmering water for 5 minutes. Then, add the green beans to the basket with the corn and continue steaming for 4 more minutes, until the vegetables are just tender.
  • Plate the sweet potato mash, top with the steak, and drizzle with balsamic sauce. Serve alongside steamed corn and green beans.
