Elevate your Aussie bangers and mash with balsamic-glazed sausages & potato rosti. A gourmet twist on a classic using simple pantry ingredients for a flavorful caramelized glaze that will impress the whole family.
Ingredients:
  • 45.50 gm olive oil, plus extra, to drizzle (optional)
  • 2 brown onions, sliced
  • 450g potato
  • 8 Thin Beef BBQ Sausages
  • 20g butter, melted
  • 50.00 ml balsamic vinegar
  • 32.00 gm brown sugar
  • 200g green beans, steamed, halved lengthways
Instructions:
  • In a large frying pan over medium heat, heat 1 ½ tbsp oil. Sauté the onion, stirring occasionally, for about 10 minutes until soft and lightly golden.
  • Place the potato in a saucepan and cover it with plenty of cold water. Bring it to a boil over high heat with the pan covered. After boiling for 5 minutes, remove the lid and transfer the potato to a plate. Let it cool down before handling.
  • Create a space on one side of the pan for the onion and introduce the sausages to the other side (use a separate pan if necessary). Cook the sausages and stir the onion occasionally for 10 minutes. Remove the onion to a plate once it begins to brown nicely.
  • As the onion and sausages cook, grate potato into a bowl. Mix in melted butter and season well. Use wet hands to combine. Heat oil in a non-stick pan and spread the potato mixture evenly. Cook until golden underneath, then flip onto a plate and return to the pan for an additional 5 minutes.
  • Combine the onion with the sausages in the pan. Stir in the vinegar and sugar. Cook for 2 minutes, tossing until fully coated.
  • Cut the rosti into appealing wedges. Arrange the rosti, sausages, onion, and beans on serving plates. Drizzle with any remaining balsamic glaze from the pan and a touch of extra oil, if desired. Season to taste and serve.
