Try these dazzling baby carrots coated in a sweet balsamic glaze for a mouthwatering side dish.
Ingredients:
  • 4 bunches baby (Dutch) carrots
  • 100g (1/2 cup, firmly packed) brown sugar
  • 30g butter, melted
  • 40.00 ml balsamic vinegar
Instructions:
  • Prepare the carrots by trimming the stems, scrubbing to remove dirt, and peeling them.
  • Preheat your oven to 180°C and nestle the carrots in a generously sized 3L (12-cup) glass or ceramic baking dish.
  • In a small bowl, mix the sugar, butter, and vinegar. Drizzle the mixture over the carrots, season with salt and pepper, then toss to coat evenly.
  • Roast in the oven, giving them a toss now and then, until carrots are tender, about 45 minutes.
  • Present on a stylish platter and generously coat with the glaze before serving.
