Indulge in fluffy banana cupcakes topped with luscious cream cheese frosting.
Ingredients:
  • 300.00 gm self-raising flour, sifted
  • 161.25 gm caster sugar
  • 2.50 gm ground cinnamon
  • 64.38 gm milk
  • 125g butter, melted, cooled
  • 2 x 59g eggs, beaten
  • 4.40 gm vanilla essence
  • 260.00 gm mashed banana (see note)
  • 250g reduced-fat cream cheese
  • 24.00 gm pure icing sugar
Instructions:
  • 1. Preheat your oven to 200°C and prepare a 12 x 1/3-cup capacity muffin pan by greasing it or lining the holes with paper cases. 2. In a bowl, combine the flour and caster sugar. Make a well in the center and stir in the cinnamon.
  • Combine milk, butter, eggs, and vanilla with the flour mixture using a large metal spoon, gently stir to combine. Then add the banana.
  • Fill the muffin pan with the mixture and bake for 12 to 15 minutes until a skewer comes out clean. Let it rest in the pan for 5 minutes before cooling on a wire rack.
  • Prepare the icing by combining cream cheese and icing sugar using an electric mixer until silky smooth. Gently spread over the cupcakes and delight in your creation.
