Ingredients:
  • 125g butter, chopped, at room temperature
  • 180.00 gm brown sugar
  • 2 eggs
  • 225.00 gm self-raising flour
  • 1.25 gm bicarbonate of soda
  • 3 bananas, mashed, sprinkled with 1-2 tsp lemon juice
  • 64.38 gm milk or water
  • 125g cream cheese, chopped
  • 300.00 gm icing sugar, sifted
  • 5.30 gm lemon juice
  • Few drops vanilla essence
Instructions:
  • Preheat your oven to a moderate 180°C. Lightly grease and line a deep, round 20cm cake pan.
  • In a medium bowl, use an electric mixer to cream together butter and sugar until fluffy. Then add eggs one at a time, beating well after each addition.
  • Combine the sifted flour and soda with the cream mixture, gently fold in the mashed banana with its juice and milk until just combined, then pour the batter into the pan.
  • Bake for 40-45 minutes until a skewer comes out clean. Allow to cool in the pan for 5 minutes before transferring to a wire rack to cool.
  • For the icing: In a medium mixing bowl, use an electric mixer to whip the cream cheese until silky. Slowly incorporate the icing sugar, juice, and vanilla, and continue to mix until velvety. Frost the cooled cake and enjoy!
