Moist banana cake with creamy frosting, made with simple pantry items and ripe bananas.
Ingredients:
  • 1.5 cups mashed bananas
  • 2 teaspoons lemon juice
  • 3 cups all-purpose flour
  • 1.5 teaspoons baking soda
  • 2.125 cups white sugar
  • 0.75 cup butter
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 1.5 cups buttermilk
  • 0.5 cup butter, softened
  • 1 teaspoon vanilla extract
  • 3.5 cups confectioners' sugar
Instructions:
  • Preheat the oven to 275 degrees F (135 degrees C) and prepare a 9x13-inch pan by greasing and flouring it.
  • Combine mashed bananas with freshly squeezed lemon juice in a small bowl. In a separate medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, whisk together sugar and butter until fluffy, about 3 to 4 minutes. Mix in eggs one at a time, followed by vanilla. Alternate adding flour mixture and buttermilk, then fold in banana mixture. Pour batter into the prepared pan.
  • Bake the cake in the preheated oven for an hour until a toothpick comes out clean. Then, transfer the cake directly to the freezer for 45 minutes to achieve ultimate moistness.
  • For the frosting: Combine butter and cream cheese until smooth. Mix in vanilla. Gradually add confectioners sugar and beat on low, then high speed until smooth.
  • Frost the chilled cake with the frosting.
