Transform those ripe bananas into irresistible banana chocolate chip cookies with a hint of banana flavor. Top with homemade banana frosting and nuts or chocolate chips for the perfect finishing touch.
Ingredients:
  • 2 1/2 ripe medium bananas
  • 1 cup sugar
  • 1/2 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 2 eggs
  • 2 cups Gold Medal™ all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup semisweet chocolate chips
  • 1/2 cup coarsely chopped walnuts
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting (from 1-lb container)
  • 1/4 cup chopped walnuts and/or miniature semisweet chocolate chips, if desired
Instructions:
  • Preheat your oven to 375°F. Mash 2 bananas to yield 1 cup of mashed bananas; set aside the remaining half. In a large bowl, use an electric mixer or a spoon to blend sugar, butter, vanilla, eggs, and mashed bananas until smooth. Add flour, baking powder, and salt, then mix in chocolate chips and 1/2 cup of walnuts.
  • Scoop 1/4 cupfuls of dough onto a large ungreased cookie sheet, spacing them 2 inches apart.
  • Bake for 11 to 15 minutes until set with light golden brown edges. Allow to cool for 1 minute before transferring to a wire rack. Let cool completely for about 30 minutes.
  • Mash 1/2 banana to get 2 tablespoons mashed. Mix frosting with mashed banana until smooth. Spread each cookie with 1 tablespoon frosting and top with 1/4 cup walnuts.
