Irresistible banana chocolate chip cookies with hearty whole wheat and oats disappear quickly!
Ingredients:
  • 1 large egg
  • 0.5 cup walnuts
  • 1 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 1 teaspoon kosher salt
  • 0.5 teaspoon baking soda
  • 0.75 cup unsalted butter, room temperature
  • 0.5 cup packed light brown sugar
  • 1.5 teaspoons vanilla extract
  • 0.5 cup mashed very ripe banana
  • 1 cup old-fashioned rolled oats
  • 8 ounces semisweet chocolate chips
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare baking sheets by lining them with parchment paper.
  • Arrange the walnuts evenly on a baking sheet.
  • Bake the walnuts in the preheated oven for 5 to 7 minutes until toasted and fragrant. Remove from the oven and allow to cool before coarsely chopping.
  • Combine all-purpose flour, whole wheat flour, salt, and baking soda in a bowl and whisk together. In a separate bowl, use an electric mixer to beat together the butter, brown sugar, and white sugar until pale and fluffy. Add the egg and vanilla extract, and beat until just combined. Lastly, gently beat in the banana until just combined.
  • Mix the flour mixture into the creamed butter until just combined; gently mix in oats, chocolate chips, and walnuts. Spoon heaping amounts of dough onto the baking sheets, spacing them about 1 1/2 inches apart.
  • Place the cookies in the preheated oven on the center rack for 6 minutes. Afterward, rotate the pans and continue baking until the edges turn golden brown, for an additional 6 to 7 minutes. Let the cookies cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
