Irresistible banana cake with cinnamon, brown sugar, and pecan topping.
Ingredients:
  • 1 cup superfine sugar
  • 0.5 cup butter, melted
  • 2 eggs, beaten
  • 1 teaspoon baking soda
  • 0.25 cup sour cream
  • 1 cup mashed ripe banana
  • 1.5 cups cake flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans
  • 3 tablespoons brown sugar, or more to taste
  • 1 teaspoon ground cinnamon
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and generously grease and flour a 9-inch square baking dish.
  • Using an electric mixer, blend superfine sugar and butter together until smooth. Add eggs one at a time, ensuring each egg is fully mixed in before adding the next. In a separate bowl, combine baking soda with sour cream and then stir into the butter mixture until well blended.
  • Fold ripe bananas into the luscious butter mixture, then gently add cake flour and baking powder until fully incorporated. Drizzle in the fragrant vanilla extract, and transfer the delectable banana cake batter into the awaiting baking dish.
  • Combine the pecans, brown sugar, and cinnamon in a bowl, then generously sprinkle the mixture over the cake batter.
  • Bake until a toothpick inserted into the center comes out clean, approximately 45 minutes in the preheated oven.
