Passover banana coffee cake with cinnamon sugar topping - a sweet and fruity kosher delight.
Ingredients:
  • 1.25 cups matzo cake meal
  • 1 teaspoon cream of tartar
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 cup butter, softened
  • 1 cup white sugar
  • 1 banana, mashed
  • 1 egg
  • 0.5 cup milk
  • 0.33333334326744 cup brown sugar
  • 2 tablespoons ground cinnamon
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and grease an 8-inch square baking pan.
  • Combine matzo cake meal, cream of tartar, baking soda, and salt in a bowl. Set aside.
  • In a large bowl, cream the butter using an electric mixer until smooth. Gradually add white sugar, beating until fluffy. Mix in the mashed banana and egg until combined. Gradually add the matzo meal mixture in 3 parts, alternating with milk, and briefly beat after each addition.
  • Smooth the batter evenly in the lined baking pan and generously sprinkle a mixture of brown sugar and aromatic cinnamon on top for a delicious touch of sweetness and warmth.
  • Bake in the preheated oven for approximately 30 minutes until a toothpick inserted into the center comes out clean.
