Banana Cupcakes with Peanut Butter Frosting

Indulgent banana cupcakes topped with creamy peanut butter and cream cheese frosting.
Ingredients:
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 2 very ripe bananas
  • 0.5 cup sour cream
  • 1.5 teaspoons vanilla extract
  • 0.5 cup unsalted butter, at room temperature
  • 1 large egg yolk
  • 1.5 cups powdered sugar
  • 1 (8 ounce) package cream cheese, at room temperature
  • 0.5 cup smooth peanut butter
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare a 12-cup muffin pan by lining it with paper liners.
  • In a medium bowl, blend flour, baking powder, baking soda, and salt. In another medium bowl, mash bananas until smooth, then stir in sour cream and vanilla extract.
  • In a large bowl, blend sugar and butter until light and fluffy using an electric mixer for about 3 minutes. Mix in egg and egg yolk until well combined. Add flour mixture in 2 parts, alternating with banana mixture, and mix briefly after each addition until just combined. Fill prepared muffin cups with a generous 1/4 cup of batter each.
  • Bake in the preheated oven for 20 minutes or until a toothpick comes out clean. Let it cool in the tin for 5 minutes before transferring to a wire rack to completely cool for about 20 minutes.
  • Sift powdered sugar into a large bowl. Combine with cream cheese, butter, and peanut butter; blend with an electric mixer until creamy. Frost the cooled cupcakes using a spatula or piping bag.
