Rum-soaked banana cake with a boozy glaze, perfect for brunch or potlucks.
Ingredients:
  • 2 ripe bananas, mashed
  • 4 eggs
  • 0.5 cup vegetable oil
  • 0.5 cup water
  • 0.25 cup banana liqueur
  • 0.25 cup rum
  • 1 (15.25 ounce) package yellow cake mix
  • 1 (4 ounce) package instant vanilla pudding mix
  • 1 cup white sugar
  • 0.5 cup butter
  • 0.25 cup water
Instructions:
  • Preheat your oven to a cozy 325 degrees F (165 degrees C) and generously grease a beautiful fluted tube pan, like a Bundt®.
  • Combine ripe bananas, eggs, vegetable oil, 1/2 cup water, 1/4 cup banana liqueur, and 1/4 cup rum in a bowl, stirring until the mixture is smooth. Incorporate cake mix and pudding mix, ensuring to scrape down the sides, until the batter is silky, about 2 minutes. Transfer the batter into the prepared pan.
  • Bake until a toothpick comes out clean when inserted in the center, approximately 50 minutes in the preheated oven.
  • In a saucepan, combine sugar, butter, and 1/4 cup water and bring to a boil just as the cake is finishing baking. Add 1/4 cup banana liqueur and 1/4 cup rum, stirring until the glaze is fully incorporated. Transfer the glaze to a glass measuring cup.
  • Remove the cake from the oven and generously pour the glaze around the sides while it's still warm in the pan. Allow it to soak for 30 minutes before flipping it onto a serving platter.
