Banana skin pickle recipe

Transform banana skins into a delicious pickle to serve with cheese, crackers, curry, or deli sandwiches. Reduce waste and elevate your meals!
Ingredients:
  • 3 whole banana skins, trimmed
  • 380g (about 2) green apples, cored
  • 1 brown onion
  • 185ml (3/4 cup) white vinegar
  • 110g (1/2 cup) white sugar
  • 20.00 ml coriander seeds
  • 2 tsp yellow mustard seeds
  • 1 tsp garam masala
  • 2.40 gm sea salt flakes
  • 1/2 tsp dried chilli flakes
  • Cheese, to serve (optional)
  • Crackers, to serve (optional)
Instructions:
  • Dice the banana skin, apple, and onion into 1cm pieces before adding them to a saucepan.
  • Combine vinegar, sugar, coriander seeds, mustard seeds, garam masala, salt, and chili in a pot over medium-high heat. Stir until sugar dissolves. Simmer for 15 minutes until apples are tender and liquid reduces.
  • While the pickle is still hot, scoop it into sterilized jars. Seal the jars and refrigerate for up to 3 months. Enjoy with cheese and crackers, if desired.
